Coffees Aged in Oak Barrels
Barrel-aged coffees represent an innovative trend in the world of specialty coffee. This process involves storing green coffee beans in barrels that previously held spirits such as whiskey, rum, and wine, among others, allowing the beans to absorb the aromas and flavors of the beverages encapsulated in the wood of the barrels.
This technique gives the coffee distinctive characteristics, such as woody notes, lower acidity and greater body, offering unique sensory experiences in each cup.
A notable example is our "Geisha Naranja Rum", a coffee that combines the elegance of the Geisha variety with nuances of rum, the result of aging in barrels that previously contained this liquor. This barrel aging process changes the chemical composition of the bean, giving it a unique aroma and flavor, without generating or transmitting traces of alcohol.
Experimenting with different barrel types and aging times has allowed us to create a variety of flavor profiles, from sweet and fruity notes to deeper nuances.
